The Yoshihiro VG-10 Yanagi Sashimi Japanese Knife is specially designed for sashimi and sushi chefs, providing a single-edged blade that glides effortlessly through fish flesh, preserving the taste and texture of the fish. Unlike other knives that may damage the fish’s cell walls, this traditional Yanagi knife leaves the fish smooth, shiny, and fresh, ensuring the quality of the fish is not compromised.
Crafted by layering softer steel over a hard VG-10 Stainless steel core, this knife combines superior sharpness and edge retention with durability. The traditional design features a completely flat ground front (shinogi) and a concave ground back (urasuki), with a flat rim (uraoshi), creating an ideal cutting edge for sashimi preparation.
